In fact the only example I can think of where they really got away with it was with James Bond, but of course even that was a rocky road to acceptance. After all the first man to replace Connery, George Lazenby, was not well accepted, and in his own opinion, it took until after his second film for Moore to become accepted in the role as well, while Dalton never really was by the public at large (though he was actually a damn good Bond, pre-dating Craig's grittier and icier killer Bond by 20 years), Brosnan had an easier ride though, and Craig had to prove himself (which he did, quite well in fact) after being royally beaten up in the press and on line prior to the release of Casino Royale.
I just can't see someone else playing Mad Max himself as working out and being widely accepted. Now if they were to use Mad Max/The Road Warrior as a mythical presence in the film, maybe get a cameo by Gibson, or maybe just have Bruce Spence as the Gyro Pilot, or others talk about Max, without actually showing him, and have the film take place in that same universe, but focusing on new characters, or perhaps even older versions of previously seen characters such as the feral kid, maybe have some character retracing Max's steps through the wasteland trying to find out what happened to the man they called Max, then that might work. But you can't replace Gibson as Mad Max. No way, no how.
Mel Gibson is Mad Max and that universe is based on his character and no one else.. no Gibson.. no Max.. Miller dont waste time revamping it...
