I thought I'd take it upon myself to start a new thread on this issue as I'm sure there's plenty to discuss and it's best not filling the ROTK EE thread with it all. :)
Now that we're nearing the end of our LOTR journey, I wanted to ask you guys which scenes or lines are your favorite out of the trilogy, or just really stuck out in your mind? And which movie out of the three is your favorite (this might be hard to judge as of now, because my fav movie is the FOTR EE but it might be the ROTK EE when that comes out, we'll have to see) Some of my fav scenes- Prologue, Dead Marshes, and Frodo in Ithilien, among many others.
Sparta*: Firstly, here's how I rank the three films(in order from favorite to least favorite):
1-The Return Of The King
2-The Two Towers
3-The Fellowship Of The Ring
Nextly, here are some of my favorite lines:

Lastly, here are some of my favorite scenes(in no particular order):
-The Grey Havens
-Siege Of Gondor/Pelennor Fields
-Helm's Deep
-The Crack Of Doom/Battle at the Black Gate
-Frodo and Sam watching the Elves leave for the Grey Havens in the EE of FOTR.
-Aragon and Boromir arguing about what course to take.
-The Gift giving scene in the EE of FOTR.
-Gandalf's return in TTT.

A scene that struck me visually along with the music/choir cue was the Nazgul on the Fell Beasts swooping down from on high to attack Minas Tirith. Talk about spine chilling!

Without giving it hours of consideration I will give you one from each movie.
The defining moments FOTR, Gandalf's Speach to Frodo, my signiture is part. TTT,
I really can't decide, so I will go with the Gandalf Balrog fight.
ROTK, Gandalf's speach concearning death. I have several favorits but One each is good for present.

I could probably end up quoting all three movies since there are so many lines/scenes that are . . precious to me. Here are just a few: :)
Gandalf:
Pity? It was pity that stayed Bilbo's hand. Many that live deserve death. Some that die deserve life. Can you give it to them, Frodo? Do not be too eager to deal out death and judgement. Even the very wise cannot see all ends. My heart tells me that Gollum has some part to play yet, for good or ill, before this is over. The pity of Bilbo may rule the fate of the Ring.
Frodo:
I wish the Ring had never come to me. I wish none of this had happened.
Gandalf:
So do all that come to see such times, but that is not for them to decide. All we have to decide is what to do with the time that is given to us. There are other forces at work in this world, Frodo, besides the will of evil. Bilbo was meant to find the Ring. In which case you were also 'meant' to have it. And that is an encouraging thought
Treebeard:
Rárum-rum! Come my friends. The ents are going to war. It is likely that we go to our doom. The last march of the ents.
Sam:
Do you remember the Shire, Mr. Frodo?
Sam:

I picked some good ones from each movie that no one has said. These quotes are pretty close, they might not be exact.
FOTR
Aragorn: Havu dalbi, Legolas. (Elvish for 'sit down, Legolas)

TTT
Legolas: Aragorn, nat nuendas (Elvish for 'Aragorn, somethings out there)
Legolas: The red sun rises, blood has been spilled this night.
Gimli: Dwarves are natural sprinters, very dangerous over short distances we are.
Eomer: I would cut off your head, dwarf. If it stood but a little higher from the ground.
Gimli: I cant see, whats going on?
Legolas: Would you rather have me describe it for you? or go get a box?

Thats about it, sorry if i got any of them wrong. I just recently rewatched those movies and ive come to like Merry and Pippen a lot more. Just realizing how much they changed makes me like them more. I mean, both of those two were heroes and neither asked for it or complained. Look at Pippen in the beggining, wondering when the next meal will be. In ROTK, hes actually willing to battle. Merry and Pippen are the 1st two people to run into the fight at the black gate (after Aragorn). I just got so much more respect for them. I never laughed at this line until i just saw it the other day, i guess i never really noticed it or knew the character of Pippen. It was in FOTR when they were in the Mines of Moria.
Pippen: Merry

Pippen: Im hungry.
LOL, i dont know why, i just seemed to laugh at that even though i heard it so many times before.

To me, a lot of the better scenes were the added/extended ones in the EEs.
Shire Prologue-more time to absorb the simple life of a hobbit
Departure of the Fellowship-music and dialogue combine to create a sense of melancholy about leaving Rivendell. Plus I love that the camera goes into Frodo's perspective. "Mordor, Gandalf. Is it left or right?
Extended battle of Amon Hen-really makes the build up to Boromir's death more intense.
The Ring of Barahir-more exposition and time spent with Saruman.
Sons of the Steward-my favorite scene in the two towers. "A chance for Faramir, captain of Gondor, to show his quality..."
Added Closing scenes in TTT-some say it slows the film down too much but I say it rounds out the movie better.
I guess the Rotk EE has a lot to live up to!

FOTR:
"It is a strange fate that we should suffer so much fear and doubt over so small a thing. Such a little thing."
- This line by Boromir made me realize for the first time the power of the Ring. The music in the background, the tension in the scene(the way everyone just stops and stairs at him), great scene/quote.
"Remember, the Ring is trying to get back to its master. It wants to be found."
-Ian McKellen delivers his lines perfectly, and here is no exception. This quote is creepy.
"If you want him, come and claim him."
-Love the way Arwen delivers this line, and what comes after is pure movie magic.
"YOU SHALL NOT PASS!"
Every single time I watch this scene I say the line along with Gandalf, it's perfect.
TTT:
"If Aragorn survives this war, you will still be parted. If Sauron is defeated and Aragorn made king and all that you hope for comes true you will still have to taste the bitterness of mortality. Whether by the sword or the slow decay of time, Aragorn will die. And there will be no comfort for you, no comfort to ease the pain of his passing. He will come to death an image of the splendor of the kings of Men in glory undimmed before the breaking of the world. But you, my daughter, you will linger on in darkness and in doubt as nightfall in winter that comes without a star. - Favorite quote in the film, this quote went absolutely perfect with what was shown on screen, poetic, powerful, and heartwrenching. This scene is just amazing.
"TO THE KING!"
- Heroic, jaw-dropping scene. The angle they use here to show them riding down the mountain was just fantastic. I was in complete awe.
"Once it takes hold of us it never lets go."
- So true...unfortunetely Frodo realizes that by the end.
ROTK:
"Ride now... Ride now... Ride. Ride for ruin and the world's ending."
- My heart was pounding like crazy during this scene.
"End? No, the journey doesn't end here. Death is just another path... One that we all must take."
- I love the way Gandalf says this to Pippin during such a chaotic scene, in that moment everything around them just blurred and gave Pippin and the audience hope.
"Don't go where I can't follow."
- Sean did such an amazing job with Sam in ROTK, he made eyes watered in a couple of scenes.

I have not read this entire thread. But I think one of the best lines is
"All you have to decide is what to do with the time that is given to you"
I know many will disagree with me here. But I HAVE to put this on the list... from the Two Towers...
"Looks like meats back on the menu boys!"
Possible the greatest line in the history of cinema?

There was the whole Mines of Moria sequence, the Black Riders on Weathertop, Frodo on the shore with Gandalf voiceover, Boromir death-scene, and Frodo and Sam at the end with the choral song in Fellowship.
In Two Towers there weren't as many, Gollum first speaking in a big scene, and then the end of Helms Deep (Gandalf charge), and the Ents charging against the Walls Of Isengard.
Return of the King was probably the best for this. Faramir's charge, Pippin singing and Denethor eating scene was great. The lighting of the beacons was brilliant. The whole battle of the Pellenor Fields was wonderful, especially the Rohorrim charge, and the Witch King fighting Eowyn and Merry. Everything with Frodo and Sam on the Mt. Doom, and the charge at the Black Gates too. I was in a dream like trance for the whole ending, which was great.

"What is this new devilry?" Boromir's voice combined with the look on Gandalf's face, and Legolas lowering his bow - you know something bad is coming. I absolutely love how Sean Bean says this line.
